In the previous post, I showed some photos of the restaurant in Tono, the place where the Tono Tales were collected at the beginning of the 20th century. Here is a meal had at that restaurant. Hittsumi soup is a representative local dish of Iwate. The interesting element is that the dough is made of wheat flour – which is rare in Japan. It is handmade. In other areas of Japan, the dish is called suiton and tsumire. It is delicious.
